Addis International Catering Plc started operation in December 2008. The vision of Addis International Catering is to serve all airlines operating through Addis Ababa Bole International Airport and eventually extend its catering services to major conferences and events the country would host.
Construction work of the state-of-the-art flight kitchen on 19,500 sq.m plot of land leased from the Ethiopian Airport Enterprise started in mid 2007 and completed in July 2008. The unit lies on an area of 6000 sq.m.
Addis International Catering Plc, the first of its kind in the region and the most modern in Africa, is designed and built to meet the highest international standards and requirements for airline catering with the most up-to-date equipment imported from Europe.
The facility, fully equipped with the latest technology to produce up to 15,000 meals a day, has put in place highly competent and efficient systems to enable it provide the best possible services. Its kitchen and bakery are fitted with the latest equipment enabling the efficient handling of all fresh food and bakery production.
It has a complete water treatment plant to secure the highest quality and purity of water essential for the safety of passengers and has 100 cubic meters backup tank to supply operation in the event of a breakdown; if a longer disruption occurs water can be delivered by water trucks.
The cold rooms, refrigerators and freezers, supported by two megawatt backup generators are computer controlled and monitored to ensure no power interruption.
The facility is set up with an energy efficient air conditioning and ventilation system, which is interlinked to produce hot water. All rooms have individual temperature settings except for all production areas that are set to a maximum temperature of 16 degrees Celsius, which is an essential hygiene requirement for the safe production and handling of food. The storage of dry food product and airline equipment is kept separately with pallet and demountable shelving.
Two large conveyor flight dishwashers as well as an airline trolley machine enable the efficient and hygienic processing of all airline equipment, while the facility is equipped with a modern laundry to process both airline material and staff uniforms.
A fully equipped modern laboratory is also in place to perform all the necessary tests to monitor the safety of food production.
Trained personnel are also in place to educate and train staff in Hazard Analysis and Critical Control Points (HACCP); a systematic preventive approach to food safety required by international airlines.
The Facility uses a completely sealed vacuum waste disposal and an eco-friendly sewage treatment plant that produces clean water to be used for the garden of the premises.
Addis International Catering Plc has setup a state-of-the-art security monitoring system of the premises and has introduced a computer system made specifically for airline caterers.
Nine new fully refrigerated high-loader vehicles are ready to provide the current delivery requirements of Addis International Catering Plc.
To ensure that Addis International Catering Plc meets and exceeds its international customers’ expectations and delivery of service of the highest standard, it has contracted a team of highly qualified and experienced professionals in this specialized field to train and groom local personnel.
One of the preliminary requirements for airlines to enter into service contract with a caterer is the caterer’s ability to pass the mandatory hygiene audit. Addis International Catering Plc has so far been audited and certified by auditors of three major Airlines, currently operating in Ethiopia.
